  • 1 can artichoke hearts, drained and quartered
  • 3 garlic cloves, minced
  • 1 lemon, juiced
  • 1/2 cup cherry tomatoes
  • 2 tbsp fresh parsley, chopped

Dairy & Oil

  • 2 tbsp olive oil
  • 1/3 cup crumbled feta cheese


Instructions

  1. Season Chicken: Season the boneless, skinless chicken thighs evenly with dried oregano, paprika, salt, and black pepper to infuse them with classic Mediterranean flavors.
  2. Heat Oil: Warm 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering, preparing the pan for cooking the chicken.
  3. Cook Chicken: Add the seasoned chicken thighs to the skillet. Sear and cook them for 5–6 minutes on each side until they develop a golden-brown crust and are fully cooked through.
  4. Remove Chicken: Transfer the cooked chicken thighs onto a plate to rest while you prepare the vegetables, preserving their juiciness.
  5. Sauté Garlic and Artichokes: In the same skillet, add the minced garlic and quartered, drained artichoke hearts. Sauté for about 2 minutes until the garlic is fragrant and the artichokes begin to soften.
  6. Add Tomatoes and Lemon: Mix in the cherry tomatoes and freshly squeezed lemon juice into the skillet, stirring to combine the flavors.
