Ingredients
Chicken & Seasoning
- 4 boneless, skinless chicken breasts or thighs
- Salt and black pepper to taste
Vegetables
- 1 1/2 pounds baby potatoes, halved
- 1 small onion, diced
- 3 cloves garlic, minced
Sauce & Toppings
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- 1 packet ranch seasoning mix (approximately 1 ounce)
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped parsley
Instructions
- Heat oil and sear chicken: Heat 1 tablespoon of olive oil in a Dutch oven over medium heat. Season the chicken breasts or thighs with salt and black pepper. Place the chicken in the pot and sear until both sides are lightly browned, about 3-4 minutes per side. Remove the chicken and set aside.
- Sauté onion and garlic: In the same Dutch oven, add the diced onion and sauté until softened and translucent, about 3-5 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.
- Add potatoes and liquids: Add the halved baby potatoes to the pot. Pour in 1 cup of chicken broth and 1 cup of heavy cream. Sprinkle in the ranch seasoning mix then stir everything well to combine.
- Simmer chicken with potatoes: Return the seared chicken pieces to the Dutch oven, nestling them into the creamy potato mixture. Bring the contents to a gentle simmer over medium-low heat.
- Cook covered: Cover the Dutch oven with its lid and cook for 25-30 minutes, or until the potatoes are tender and the chicken is cooked through (internal temperature should reach 165°F / 74°C).
- Add cheese topping: Remove the lid and sprinkle 1/2 cup shredded cheddar cheese evenly over the top. Allow the cheese to melt for 2-3 minutes with the lid off.
- Garnish and serve: Sprinkle 2 tablespoons of chopped fresh parsley over the dish for freshness. Serve hot and enjoy your creamy ranch chicken and potatoes!
Notes
- Baby Yukon Gold potatoes are preferred for their creamy texture when cooked.
- Add extra vegetables like carrots or green beans for more color and nutrition.
- Sear chicken well to develop flavor before simmering.
- Use fresh parsley for a bright garnish and extra freshness.
- Adjust ranch seasoning to taste if you prefer more or less intensity.
