Description

Deviled Egg Pasta Salad is a creamy and tangy side dish that combines the classic flavors of deviled eggs with tender pasta. This refreshing salad features a mayonnaise and mustard-based dressing mixed with chopped hard-boiled eggs, pickle relish, and a hint of paprika, making it perfect for picnics, barbecues, or a flavorful addition to any meal.

Ingredients

Salad Ingredients

  • 2 cups pasta (elbow or shells)
  • 6 hard-boiled eggs, chopped
  • 1/4 cup red onion, finely chopped

Dressing Ingredients

  • 3/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon paprika
  • 1 tablespoon pickle relish
  • Salt and pepper to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain well and rinse under cold water to cool. Set aside to drain completely.
  2. Prepare Dressing: In a large mixing bowl, combine the mayonnaise, mustard, paprika, pickle relish, salt, and pepper. Whisk together until smooth and well blended.
  3. Combine Ingredients: Add the cooled pasta, chopped hard-boiled eggs, and finely chopped red onion to the dressing. Gently fold everything together until the pasta and eggs are thoroughly coated with the dressing.
  4. Chill Salad: Cover the bowl with plastic wrap and refrigerate the salad for at least 1 hour to allow flavors to meld and the salad to chill thoroughly.
  5. Serve: Before serving, give the salad a gentle stir. Optionally, sprinkle extra paprika on top for presentation and garnish.

Notes

  • Garnish with extra paprika for presentation and added color.
  • Add chopped celery for extra crunch and texture if desired.
