Description

Luxurious dark chocolate raspberry truffles that offer a rich, creamy texture with a subtle fruity twist. These no-bake treats are perfect for gifting, special occasions, or indulging in a decadent dessert at home.

Ingredients

Chocolate Base

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter

Flavoring

  • 1 tsp raspberry extract or 2 tbsp freeze-dried raspberries, crushed

Coating

  • 1/4 cup unsweetened cocoa powder

Instructions

  1. Heat the Cream: In a small saucepan, gently heat the heavy cream until it just begins to simmer. Remove from heat immediately to avoid boiling.
  2. Combine with Chocolate and Butter: Pour the hot cream over the chopped dark chocolate and butter in a heatproof bowl. Let it sit for about 2-3 minutes to soften the chocolate.
  3. Stir Until Smooth: Stir the mixture slowly and thoroughly until it becomes a smooth, glossy ganache without any lumps.
  4. Add Raspberry Flavor: Stir in the raspberry extract or crushed freeze-dried raspberries into the ganache until evenly combined.
  5. Chill the Ganache: Cover the bowl with plastic wrap and refrigerate the ganache for about 45 minutes to 1 hour, or until firm enough to handle.
  6. Form the Truffles: Using a small spoon or melon baller, scoop out portions of the firm ganache and quickly roll them into smooth balls using your hands.
  7. Coat in Cocoa Powder: Roll each truffle in the unsweetened cocoa powder until fully coated, then place them on a parchment-lined tray.
  8. Final Chill: Refrigerate the coated truffles for at least 30 minutes before serving to allow them to set properly.

Notes

  • Use high-quality dark chocolate (70% cocoa or higher) for the best flavor and texture.
  • Freeze-dried raspberries add texture and natural raspberry flavor without extra moisture.
  • Keep the truffles refrigerated and consume within 1 week for optimal freshness.
  • You can roll the truffles in powdered sugar, chopped nuts, or shredded coconut for variation.
  • Allow truffles to come to room temperature briefly before serving to enhance flavor and texture.
