Ingredients
Beef and Broth
- 1 pound beef stew meat
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
Vegetables
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1/2 cup onion, diced
- 2 cloves garlic, minced
Seasonings
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Prepare ingredients: Dice the potatoes, slice the carrots, chop the celery, and dice the onion. Mince the garlic cloves.
- Combine in crockpot: Add the beef stew meat into the crockpot, then add the prepared potatoes, carrots, celery, and onion on top.
- Add liquids and seasoning: Pour in the beef broth and the canned diced tomatoes. Add the minced garlic along with dried thyme, dried oregano, salt, and black pepper to taste.
- Mix gently: Stir the ingredients gently to combine everything evenly without breaking up the vegetables.
- Cook the soup: Cover the crockpot and cook on low heat for 7 to 8 hours, or cook on high for 4 to 5 hours, until the beef is tender and flavors meld.
- Adjust seasoning and serve: Taste the soup towards the end of cooking and adjust the salt and pepper if needed before serving hot.
Notes
- For deeper flavor, brown the beef in a skillet before adding it to the crockpot.
- To add more vegetables, toss in green beans or peas during the last hour of cooking to keep them crisp.
