Description

This Crockpot Chuck Roast is a tender and juicy beef dish slow-cooked with hearty vegetables like carrots, potatoes, and onions, infused with savory herbs and rich beef broth. Perfect for an easy, comforting meal with minimal prep, it results in melt-in-your-mouth meat and flavorful vegetables.

Ingredients

Meat and Seasonings

  • 1.4 kg beef chuck roast
  • 1 tsp salt
  • ½ tsp black pepper

Vegetables

  • 1 onion, sliced
  • 4 carrots, cut into large pieces
  • 700 g baby potatoes
  • 4 cloves garlic, minced

Liquids and Sauces

  • 1 tbsp olive oil
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste

Herbs and Spices

  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves

Instructions

  1. Season the Meat: Generously season the beef chuck roast with salt and black pepper to enhance the flavor of the meat before cooking.
  2. Sear the Roast: Heat olive oil in a skillet over medium-high heat and sear the roast on all sides for 2 to 3 minutes each. This step is optional but seals in juices and adds extra flavor.
  3. Prepare Vegetables in Crockpot: Place sliced onions, large carrot pieces, and baby potatoes at the bottom of the crockpot to create a bed for the roast.
  4. Layer the Roast: Position the seared chuck roast on top of the vegetables inside the crockpot.
  5. Add Flavorings: Add minced garlic, beef broth, Worcestershire sauce, tomato paste, dried thyme, dried rosemary, and bay leaves to the crockpot. This mixture will create the braising liquid and infuse the roast with rich flavors.
  6. Slow Cook: Cover the crockpot and cook on LOW for 8 to 9 hours or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shredded.
  7. Finish and Serve: Remove bay leaves from the crockpot. Shred or slice the roast, and serve it hot with the cooked vegetables and the flavorful cooking juices spooned over the top.

Notes

  • Cooking low and slow in the crockpot produces the most tender and flavorful results.
  • To thicken the gravy, transfer the cooking liquid to a saucepan and simmer it until it reduces to desired consistency.
  • Searing the beef before slow cooking is optional but adds a deeper, richer flavor to the roast.
