Description
CrockPot Beef Short Ribs with Rich Gravy are slow-cooked until incredibly tender in a deep, savory gravy. This hands-off recipe delivers restaurant-quality flavor with minimal effort—perfect for cozy dinners or special Sunday meals.
Ingredients
Short Ribs
- 3 lbs beef short ribs
- Salt and black pepper, to taste
- 2 tbsp olive oil
Gravy
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp cornstarch + 2 tbsp water (slurry)
Instructions
- Season and Sear: Season the beef short ribs generously with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the short ribs on all sides until they develop a deep brown crust, locking in flavor.
- Transfer to CrockPot: Place the browned short ribs into the CrockPot to prepare for slow cooking.
- Sauté Aromatics: In the same skillet, sauté the sliced onion until softened and translucent. Add minced garlic and cook for an additional 30 seconds to release aroma.
- Prepare Gravy Base: Stir in tomato paste, Worcestershire sauce, beef broth, dried thyme, and dried rosemary into the skillet. Bring the mixture to a simmer, allowing the flavors to meld.
- Add Gravy to Ribs: Pour the simmering gravy mixture over the short ribs in the CrockPot, ensuring they are well-coated.
- Slow Cook: Cover and cook on LOW for 8 hours or on HIGH for 4 to 5 hours, until the meat is fall-apart tender.
- Thicken Gravy: Remove the ribs from the CrockPot and keep warm. Stir the cornstarch slurry into the cooking liquid, cover, and cook on HIGH for 10 to 15 minutes until the gravy thickens to a rich consistency.
- Serve: Return the ribs to the thickened gravy and serve immediately, perfect over mashed potatoes, polenta, or egg noodles.
Notes
- For deeper flavor, deglaze the searing pan with a splash of beef broth before adding the liquid to the CrockPot.
- Serve over mashed potatoes, polenta, or egg noodles for a complete meal.
- Leftovers taste even better the next day as flavors continue to develop.
