Description

A healthier twist on the classic schnitzel — chicken breasts coated in breadcrumbs and baked until golden and crispy.


Ingredients

For the Chicken Schnitzel:

  • 4 chicken breasts, pounded thin
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups breadcrumbs (panko recommended)
  • 1/2 cup Parmesan, grated
  • 1 tsp paprika
  • Salt & pepper
  • Cooking spray


Instructions

  1. Preheat oven to 425°F. Line baking sheet with parchment.
  2. Dredge chicken: flour → egg → breadcrumb-Parmesan mixture.

  3. Place on baking sheet, spray with oil.
  4. Bake 20–25 minutes until crispy and cooked through.
