Description
A rich and creamy sweet potato salad featuring tender chunks of sweet potatoes coated in a tangy and flavorful dressing made from mayonnaise, sour cream, mustard, and honey. Perfect for picnics, barbecues, or as a refreshing side dish for any meal.
Ingredients
Sweet Potato Salad
- 3 cups sweet potatoes, peeled and cubed
- 1/4 cup celery, chopped
- 1/4 cup red onion, finely chopped
Dressing
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Boil Sweet Potatoes: Place the peeled and cubed sweet potatoes in a pot of salted water and bring to a boil. Cook for 10–12 minutes or until the potatoes are tender but not mushy. Drain and allow to cool completely.
- Prepare Dressing: In a mixing bowl, whisk together the mayonnaise, sour cream, mustard, honey, salt, and pepper until the mixture is smooth and well combined.
- Mix Salad: Add the cooled sweet potatoes along with the chopped celery and finely chopped red onion to the dressing. Gently toss everything together until the sweet potatoes are evenly coated with the dressing.
- Chill Before Serving: Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the salad to chill. Serve cold for best taste.
Notes
- Do not overcook the potatoes to avoid mushiness; they should be tender but hold their shape.
- For extra freshness and flavor, add chopped herbs such as parsley or chives before serving.
