Description

Creamy Spinach & Chicken Bake is a rich and comforting casserole filled with tender chicken, fresh spinach, and a creamy garlic sauce topped with melted cheese. This simple oven-baked dish makes a perfect weeknight family meal that’s both satisfying and flavorful.

Ingredients

Chicken and Vegetables

  • 3 cups cooked, diced chicken
  • 3 cups fresh spinach (lightly wilted)

Creme Mixture

  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Toppings

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a baking dish to prevent sticking.
  2. Prepare Creamy Sauce: In a mixing bowl, combine the softened cream cheese, sour cream, milk, minced garlic, onion powder, salt, and pepper. Stir until the mixture is smooth and well blended.
  3. Combine Ingredients: Add the cooked diced chicken and lightly wilted spinach to the creamy sauce. Mix thoroughly until the chicken and spinach are evenly coated with the creamy mixture.
  4. Assemble Casserole: Spread the combined mixture evenly into the prepared baking dish, ensuring a uniform layer for even cooking.
  5. Add Cheese Toppings: Sprinkle the shredded mozzarella cheese and grated Parmesan evenly over the top of the mixture to create a golden, cheesy crust when baked.
  6. Bake: Place the casserole in the preheated oven and bake for 25–30 minutes, or until the casserole is hot, bubbly and the cheese is melted and starting to turn golden.
  7. Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes before serving to allow the flavors to meld and to cool slightly for easier serving.

Notes

  • For a heartier meal, add cooked rice or pasta to the casserole mixture before baking.
  • Greek yogurt can substitute sour cream for a tangier and healthier option.
  • Leftover casserole can be stored in the refrigerator for up to 4 days; reheat thoroughly before serving.
