Description
A rich and hearty Creamy Sausage Potato Soup loaded with savory Italian sausage, tender diced potatoes, and a smooth, creamy broth. This comforting American soup, enhanced with garlic, onions, and cheddar cheese, is perfect for warming up on chilly days.
Ingredients
Sausage and Base
- 1 lb Italian sausage, casings removed
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
Soup and Seasonings
- 4 medium potatoes, peeled and diced
- 4 cups chicken broth
- 1 tsp dried thyme
- Salt and black pepper, to taste
Cream and Garnishes
- 1 cup heavy cream
- 1 cup shredded cheddar cheese (optional)
- Chopped green onions, for garnish
Instructions
- Brown the sausage: In a large soup pot over medium heat, cook the Italian sausage, breaking it apart with a spoon, until fully browned. Remove some excess grease if necessary to avoid a greasy soup.
- Sauté onion and garlic: Add butter to the pot along with the diced onion and minced garlic. Cook until the onion becomes soft and translucent, releasing their fragrant aromas.
- Add potatoes and seasonings: Stir in the peeled and diced potatoes along with dried thyme. Pour in the chicken broth to cover the potatoes and bring the mixture to a boil.
- Simmer the soup: Reduce heat to low and simmer the soup for 20 to 25 minutes, or until the potatoes are tender and easily pierced with a fork.
- Thicken the soup: Lightly mash some of the potatoes in the pot using a potato masher or spoon to naturally thicken the broth while still keeping some potato chunks intact.
- Add cream and cheese: Stir in the heavy cream and shredded cheddar cheese, if using, to make the soup rich and creamy. Continue to simmer gently for another 5 minutes, stirring occasionally to blend the flavors and melt the cheese.
- Season to taste: Taste the soup and season with salt and black pepper according to your preference.
- Garnish and serve: Ladle the soup into bowls and garnish with chopped green onions. Serve warm and enjoy this hearty comfort food.
Notes
- For extra heat, use spicy Italian sausage instead of mild.
- Leftover soup can be refrigerated in an airtight container for up to 3 days.
- To make the soup dairy-free, substitute heavy cream with coconut milk and omit the cheddar cheese.
- If you prefer a smoother texture, blend a portion of the soup before adding the cream.
