Mushroom Marsala Sauce
- 1 cup mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Season the chicken: Pat the chicken breasts dry then season evenly with salt and black pepper to ensure a flavorful base for the dish.
- Cook the chicken: Heat the olive oil and butter together in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on both sides and nearly cooked through, about 5-7 minutes per side. Remove the chicken from the pan and set aside.
- Sauté the mushrooms: In the same pan, add the sliced mushrooms and cook over medium heat until they release their moisture and become tender, about 5 minutes.
- Add garlic: Add the minced garlic to the mushrooms and sauté briefly for about 30 seconds until fragrant, being careful not to burn it.
- Deglaze with Marsala wine: Pour the Marsala wine into the skillet to deglaze, scraping up any browned bits from the bottom. Let it simmer for 3-4 minutes to reduce slightly and concentrate the flavor.
- Add cream and return chicken: Stir in the cream and return the chicken breasts to the pan. Spoon some sauce over the chicken to coat it.
- Simmer until done: Continue cooking for another 5-7 minutes, allowing the sauce to thicken and the chicken to finish cooking through, reaching an internal temperature of 165°F (75°C).
- Serve: Serve the creamy chicken Marsala warm, spooning extra sauce over the top. It pairs beautifully with pasta or mashed potatoes.
