Ingredients

For the soup:

  • 2 leeks, white & light green parts only, sliced
  • 1 head cauliflower, chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt & pepper, to taste


Instructions

  1. Sauté Leeks: In a pot, sauté leeks in butter until soft.
  2. Add Cauliflower and Broth: Add cauliflower and vegetable broth to the pot. Simmer for 20 minutes.
  3. Blend and Stir: Blend the soup until smooth. Stir in heavy cream, season with salt and pepper to taste, then serve hot.
