Ingredients
For the soup:
- 2 tbsp butter
 - 2 leeks, white & light green parts only, sliced
 - 1 head cauliflower, chopped
 - 4 cups vegetable broth
 - 1/2 cup heavy cream
 - Salt & pepper, to taste
 
Instructions
- Sauté Leeks: In a pot, sauté leeks in butter until soft.
 - Add Cauliflower and Broth: Add cauliflower and vegetable broth to the pot. Simmer for 20 minutes.
 - Blend and Stir: Blend the soup until smooth. Stir in heavy cream, season with salt and pepper to taste, then serve hot.
