Ingredients
Vegetables
- 2 cups broccoli florets
- 2 cups fresh spinach
- 1 small onion, chopped
- 2 cloves garlic, minced
Liquids & Fats
- 3 cups vegetable broth
- 1 cup milk or cream
- 2 tablespoons butter or olive oil
Seasonings
- Salt and black pepper to taste
Instructions
- Heat fat: Heat butter or olive oil in a pot over medium heat until melted and shimmering.
- Sauté aromatics: Add chopped onion and minced garlic to the pot and cook, stirring frequently, until softened and fragrant, about 3–5 minutes.
- Cook broccoli: Add broccoli florets and vegetable broth, bringing the mixture to a boil over high heat.
- Simmer: Reduce heat to low and simmer the soup for 10 to 12 minutes, or until the broccoli is tender and easily pierced with a fork.
- Add spinach: Stir in fresh spinach and cook for an additional 2 to 3 minutes until the spinach has wilted completely.
- Blend soup: Carefully transfer the soup to a blender, or use an immersion blender directly in the pot, and blend until the soup reaches a smooth, creamy consistency.
- Finish: Stir in milk or cream and season the soup with salt and black pepper to taste. Heat gently over low heat if necessary, ensuring the soup is warmed through but not boiled.
- Serve: Ladle the creamy soup into bowls and serve warm, optionally garnished with a drizzle of cream or a sprinkle of cheese.
Notes
- Use plant-based milk such as almond or oat milk for a vegan-friendly version.
- Add shredded cheese like Parmesan or cheddar for extra richness and flavor.
- For a lower fat option, use olive oil instead of butter and low-fat milk instead of cream.
- You can replace spinach with kale for a different leafy green boost.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
