Description

Tender chicken breasts simmered in a rich and creamy cream cheese sauce infused with garlic and Italian herbs, creating an easy, comforting, and flavorful dinner perfect for weeknight meals.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Seasoning & Sauce

  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 8 oz cream cheese, softened and cubed
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides evenly with salt, black pepper, and paprika to add flavor and color.
  2. Heat the olive oil: Place a large skillet over medium-high heat and add the olive oil, allowing it to warm up until shimmering but not smoking.
  3. Cook the chicken: Add the seasoned chicken breasts to the skillet and cook them for 5 to 6 minutes on each side, or until they develop a golden-brown crust and are nearly cooked through.
  4. Add garlic: Stir in the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn the garlic.
  5. Pour in chicken broth: Pour the chicken broth into the skillet and bring the mixture to a gentle simmer to start forming the sauce.
  6. Add cream cheese and seasoning: Add softened cream cheese and Italian seasoning to the skillet, stirring continuously until the cream cheese fully melts and the sauce becomes smooth and creamy.
  7. Simmer the chicken: Reduce the heat to low and allow the chicken to simmer in the sauce for 10 to 15 minutes, ensuring the chicken is cooked through and the sauce thickens nicely.
  8. Garnish and serve: Sprinkle the chopped fresh parsley over the dish for a burst of fresh flavor and color, then serve immediately over rice, pasta, or mashed potatoes if desired.

Notes

  • Serve over rice, pasta, or mashed potatoes for a complete meal.
  • For added nutrition and flavor, stir in spinach or mushrooms during the simmering step.
