Bright, fluffy cranberry orange muffins bursting with tart cranberries and fresh citrus flavor, perfect for a delightful breakfast or snack.
Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Fruit and Flavor
- 1 cup fresh or frozen cranberries
- 1 tablespoon orange zest
Wet Ingredients
- 3/4 cup orange juice
- 1/3 cup vegetable oil
- 1 large egg
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until evenly combined.
- Add Cranberries and Zest: Toss the cranberries with a little flour from the dry mixture to prevent them from sinking and then stir them into the dry ingredients along with the orange zest.
- Combine Wet Ingredients: In a separate bowl, whisk together the orange juice, vegetable oil, and the egg until fully blended.
- Mix Batter: Pour the wet ingredients into the dry ingredients and gently stir just until combined. Be careful not to overmix to keep the muffins tender.
- Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full for optimal rise.
- Bake: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean and the muffins are set.
- Cool and Serve: Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring to a wire rack. Serve warm or at room temperature.
Notes
- Tossing cranberries in flour helps prevent them from sinking to the bottom while baking.
- Use fresh or frozen cranberries; if frozen, do not thaw before mixing to avoid color bleed.
- Do not overmix the batter to ensure fluffy, tender muffins.
- For a zestier orange flavor, increase orange zest to 2 tablespoons.
- Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
