Ingredients
For the Soup:
- 2 tbsp olive oil
 - 1 onion, diced
 - 3 carrots, diced
 - 3 cloves garlic, minced
 - 2 cans chickpeas, drained
 - 6 cups vegetable broth
 - 2 cups chopped kale
 - 1 tsp thyme
 - Salt & pepper, to taste
 
Instructions
- Sauté Vegetables: Heat olive oil in a large pot. Sauté onion, carrots, and garlic until softened.
 - Add Ingredients: Pour in vegetable broth, chickpeas, thyme, salt, and pepper. Simmer for 20 minutes.
 - Finish with Kale: Stir in chopped kale and cook for an additional 5 minutes until kale is tender.
