Description
Soft, fluffy breakfast biscuits made with cottage cheese—high in protein, lightly savory, and perfect for a quick morning bite.
Ingredients
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
Wet Ingredients
- 1 cup cottage cheese
- 1 egg
- 2–3 tbsp milk (as needed)
Fat
- 1/4 cup butter (cold, cubed)
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, and salt thoroughly to ensure even leavening.
- Cut in Butter: Add the cold, cubed butter to the dry mixture and use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs.
- Add Wet Ingredients: Stir in the cottage cheese and egg, mixing gently to incorporate without overworking the dough.
- Form Dough: Slowly add the milk, one tablespoon at a time, until a soft dough forms that is slightly sticky but manageable.
- Shape Biscuits: Turn the dough out onto a lightly floured surface; roll or pat it to about 2 cm (3/4 inch) thickness. Use a biscuit cutter or knife to cut the dough into your desired biscuit shapes.
- Arrange on Baking Sheet: Place the cut biscuits on the prepared baking sheet spaced apart to allow for rising.
- Bake: Bake in the preheated oven for 12 to 15 minutes or until the biscuits are golden brown on top and cooked through.
- Serve: Remove from oven and serve warm for the best texture and flavor.
Notes
- Do not overmix the dough to keep the biscuits tender and flaky.
- For extra flavor, add herbs like chives or rosemary, or mix in shredded cheese.
- Biscuits are best enjoyed fresh but can be reheated to regain warmth and softness.
