Ingredients

Noodles

  • 300 g noodles, such as spaghetti, soba, or Chinese wheat noodles

Sesame Sauce

  • 1/4 cup tahini
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp peanut butter
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • 1–2 tbsp cold water
  • 1/2 tsp chili flakes

Garnishes

  • 1 cucumber, julienned
  • 2 green onions, sliced
  • 1 tbsp sesame seeds


Instructions

  1. Cook Noodles: Bring a pot of water to a boil and cook the noodles according to the package directions until al dente. Be careful not to overcook. Once done, drain the noodles and immediately rinse thoroughly under cold water to stop the cooking process and cool them down.
  2. Prepare Sauce: In a medium bowl, whisk together the tahini, soy sauce, rice vinegar, sesame oil, honey, peanut butter, minced garlic, grated ginger, and chili flakes. Gradually add cold water, one tablespoon at a time, until the sauce becomes smooth and pourable in consistency.
  3. Toss Noodles with Sauce: Add the chilled noodles to the sauce bowl and toss thoroughly to coat every strand evenly with the creamy sesame dressing.
  4. Add Vegetables: Gently fold in the julienned cucumber and sliced green onions into the sauced noodles for fresh crunch and flavor contrast.
  5. Garnish and Serve: Sprinkle the sesame seeds over the top and serve immediately chilled or keep refrigerated until ready to eat.

  • For added protein, mix in shredded chicken, tofu cubes, or cooked edamame beans.
