Description
A flexible and flavorful chow mein made with whatever vegetables you have on hand, tossed in a rich soy sauce–based sauce for a simple and satisfying vegan meal that’s perfect for using up leftover veggies.
Ingredients
Base
- 200 g chow mein noodles
Vegetables
- 2 cups mixed vegetables (cabbage, carrots, bell peppers, bean sprouts)
- 2 green onions, sliced
Sauce and Seasoning
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
Oil
- 2 tbsp oil (vegetable or canola oil preferred for stir-frying)
Instructions
- Cook Noodles: Cook the chow mein noodles according to the package instructions, generally boiling for about 3-5 minutes until al dente, then drain and set aside to prevent sticking.
- Sauté Garlic: Heat 2 tablespoons of oil in a wok or large pan over medium-high heat. Add the minced garlic and stir-fry briefly until fragrant, about 30 seconds to 1 minute, taking care not to burn it.
- Cook Vegetables: Add the mixed vegetables (such as cabbage, carrots, bell peppers, and bean sprouts) to the wok. Stir-fry for about 3-5 minutes until they are slightly tender but still crisp.
- Add Noodles: Add the cooked and drained noodles to the pan with the vegetables, tossing gently to combine and heat through.
- Mix Sauce: Stir together the soy sauce, dark soy sauce, sugar, and sesame oil in a small bowl, then pour this mixture over the noodles and vegetables in the wok.
- Toss and Coat: Toss everything together thoroughly so that the noodles and vegetables are evenly coated with the soy sauce mixture. Cook for another 1-2 minutes to allow flavors to meld and noodles to absorb the sauce.
- Garnish and Serve: Remove from heat and garnish with the sliced green onions. Serve immediately while hot for best texture and flavor.
Notes
- Use any vegetables you need to use up, such as broccoli, snap peas, or mushrooms.
- For extra protein, add tofu or mushrooms during the vegetable stir-fry step.
- Adjust the amount of soy sauce to taste, depending on your preference for saltiness.
- Be careful not to overcook the vegetables to keep their crunchy texture.
- You can substitute chow mein noodles with other thin noodles like lo mein or thin spaghetti.
