Description

Classic Spicy Moroccan Chicken in Rich Sauce is a fragrant and flavorful dish featuring tender chicken simmered in a bold sauce made with warm Moroccan spices, garlic, tomatoes, and herbs. This comforting dish pairs perfectly with couscous, rice, or crusty bread.

Ingredients

Chicken and Marinade

  • 1 1/2 pounds chicken thighs or drumsticks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Sauce Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili flakes or cayenne pepper
  • 1/2 cup green olives (optional)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped parsley
  • Juice of 1/2 lemon

Instructions

  1. Prepare the chicken: Season the chicken thighs or drumsticks with salt and black pepper. Set aside.
  2. Brown the chicken: Heat olive oil in a large skillet or pot over medium heat. Add the chicken pieces and brown on both sides until they become lightly golden. Remove the chicken and set aside.
  3. Sauté onions: In the same pot, add the finely chopped onion and cook until softened, stirring occasionally to avoid burning.
  4. Add garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, ensuring it doesn’t brown.
  5. Add spices: Stir in the paprika, cumin, ground coriander, turmeric, cinnamon, and chili flakes or cayenne pepper. Cook briefly for a minute to awaken the spices and deepen their aroma.
  6. Add liquids: Pour in the crushed tomatoes and chicken broth, stirring everything to combine thoroughly.
  7. Simmer chicken: Return the browned chicken pieces to the pot. Bring the mixture to a simmer, then cover and cook for 30 to 35 minutes until the chicken is tender and cooked through.
  8. Finish the sauce: Stir in green olives, fresh lemon juice, chopped cilantro, and parsley.
  9. Final simmer: Let the dish simmer for another 5 minutes to meld the flavors.
  10. Serve: Serve the spicy Moroccan chicken hot, paired with couscous, rice, or crusty bread as desired.

Notes

  • Serve with couscous, rice, or warm flatbread for a complete meal.
