Description

A simple and comforting homemade classic chicken soup featuring tender shredded chicken, fresh vegetables, and a flavorful broth. This warm and soothing soup is ideal for cozy days, quick meals, or to help soothe a cold.

Ingredients

Soup Base

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced

Broth & Chicken

  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Garnish

  • Fresh parsley for garnish

Instructions

  1. Heat olive oil: Warm the olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add the diced onion, sliced carrots, and sliced celery to the pot. Cook them for 5 to 7 minutes or until they become softened and fragrant.
  3. Add garlic: Stir in the minced garlic and cook for an additional 1 minute to enhance the flavor without burning it.
  4. Add broth and boil: Pour in the chicken broth and bring the mixture to a boil, allowing the flavors to meld.
  5. Simmer vegetables: Reduce the heat to low and let the broth simmer for 10 minutes to further soften the vegetables and develop the soup base.
  6. Add chicken and thyme: Stir in the shredded cooked chicken and dried thyme, then simmer for another 5 minutes to heat through and infuse flavor.
  7. Season soup: Season with salt and black pepper according to your taste preferences.
  8. Garnish and serve: Garnish with freshly chopped parsley and serve the soup warm for maximum comfort.

Notes

  • For a heartier meal, add egg noodles during the last 10 minutes of simmering.
  • Use rotisserie chicken to save time and add extra flavor.
