Chicken and Salad

  • 2 boneless skinless chicken breasts

Dressing

  • ½ teaspoon chipotle powder

Instructions

  1. Season the chicken: Rub the boneless skinless chicken breasts evenly with 1 tablespoon olive oil and 1 tablespoon chipotle seasoning to coat thoroughly.
  2. Grill the chicken: Heat the grill to medium-high. Place the chicken breasts on the grill and cook for 6 to 7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  3. Rest and slice chicken: Remove the chicken from the grill and let it rest for 5 minutes. Then slice into thin strips.
  4. Prepare the salad base: In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, diced avocado, corn kernels, sliced red onion, and chopped cilantro.
  5. Make the dressing: In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lime juice, 1 teaspoon honey, ½ teaspoon chipotle powder, and salt and pepper to taste until emulsified.
  6. Assemble the salad: Top the prepared salad base with sliced grilled chicken, then drizzle the smoky lime dressing evenly over the salad.
