Ingredients
Soup Base
- 3 ripe avocados
- 1 large cucumber, peeled and chopped
- 2 cups vegetable broth, chilled
- 1/2 cup Greek yogurt
- 1/4 cup fresh lime juice
- 1/4 cup fresh cilantro
- 1 small garlic clove
- 1/4 small red onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
Garnish
- 1 tablespoon olive oil
- Additional cilantro, diced cucumber or avocado for garnish (optional)
Instructions
- Combine Ingredients: Place the avocados, chopped cucumber, chilled vegetable broth, Greek yogurt, fresh lime juice, cilantro, garlic clove, red onion, salt, black pepper, and ground cumin into a blender.
- Blend Smooth: Blend the mixture on high speed until it becomes completely smooth and creamy without any lumps.
- Adjust Seasoning: Taste the soup and adjust the lime juice and seasonings according to your preference. Add more broth if you desire a thinner consistency.
- Chill Soup: Transfer the blended soup into a covered container and refrigerate for at least 1 hour to enhance the flavors and serve it cold.
- Serve: Before serving, give the soup a good stir. Drizzle with olive oil and garnish with fresh cilantro, diced cucumber, or avocado as desired.
- Enjoy: Serve the chilled avocado soup immediately for the freshest taste and best texture.
Notes
- Use ripe avocados for the creamiest and smoothest texture.
- Add diced jalapeño for a spicy kick.
- Replace Greek yogurt with coconut yogurt to make the recipe dairy-free.
- Serve with tortilla chips or toasted bread for added crunch.
- The soup is best enjoyed fresh since avocado tends to darken over time.
