Description

A hearty and flavorful Mexican-inspired soup featuring tender shredded chicken, aromatic spices, fresh vegetables, and a zesty avocado salsa, topped with crispy tortilla strips for a satisfying and vibrant meal.

Ingredients

Soup

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup corn kernels
  • Salt and pepper to taste

Avocado Salsa

  • 1 avocado, diced
  • 1 small tomato, diced
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro
  • Salt to taste

Toppings

  • Tortilla strips
  • Shredded cheese (optional)

Instructions

  1. Sauté Aromatics: Heat olive oil in a pot over medium heat. Add diced onion and cook until soft and translucent, about 5 minutes.
  2. Add Spices and Garlic: Stir in minced garlic, cumin, and chili powder, cooking for about 1 minute until fragrant but not burnt.
  3. Combine Soup Ingredients: Add diced tomatoes (with juices), chicken broth, corn kernels, and shredded chicken to the pot. Stir well to combine all ingredients.
  4. Simmer Soup: Bring the mixture to a boil, then reduce heat and let simmer gently for 15 minutes to allow flavors to meld together.
  5. Prepare Avocado Salsa: In a separate bowl, mix diced avocado, diced tomato, lime juice, chopped cilantro, and salt. Stir gently to combine without mashing the avocado.
  6. Serve: Ladle the hot soup into bowls, then top each serving with a generous spoonful of the fresh avocado salsa and a handful of crispy tortilla strips. Optionally sprinkle with shredded cheese.

Notes

  • Using rotisserie chicken can save time and adds great flavor.
  • Add diced jalapeños or a pinch of cayenne pepper to the soup for extra heat.
  • For a spicier salsa, include chopped serrano peppers or hot sauce.
  • If you prefer, bake your own tortilla strips by cutting corn tortillas into strips, tossing with a little oil and salt, and baking at 375°F for 10 minutes.
