- 1½ lbs boneless, skinless chicken breasts, sliced

- 4 cups cooked cilantro-lime rice or white rice
- 1 (15 oz) can black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 1 tbsp olive oil
- 1 avocado, sliced
- ½ cup pico de gallo
- ¼ cup chopped fresh cilantro

Instructions
- Season the Chicken: Toss the sliced chicken breasts with olive oil, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, kosher salt, and black pepper until fully coated.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes, stirring occasionally, until browned on the outside and cooked through. Remove from skillet and set aside.
- Sauté the Vegetables: Add 1 tablespoon olive oil to the same skillet. Add the sliced red, yellow, and green bell peppers along with the onion. Sauté for 5–6 minutes until the vegetables are tender-crisp and slightly caramelized.
- Assemble the Bowls: Divide the cooked cilantro-lime or white rice among four serving bowls. Top each with black beans, the sautéed fajita vegetables, and cooked chicken.
- Add Fresh Toppings: Garnish each bowl with sliced avocado, pico de gallo, chopped fresh cilantro, and lime wedges for squeezing over just before eating.
