Ingredients

For the Chicken

  • lbs boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper

Bowl Ingredients

  • 4 cups cooked cilantro-lime rice or white rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 tbsp olive oil
  • 1 avocado, sliced
  • ½ cup pico de gallo
  • ¼ cup chopped fresh cilantro
  • Lime wedges


Instructions

  1. Season the Chicken: Toss the sliced chicken breasts with olive oil, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, kosher salt, and black pepper until fully coated.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes, stirring occasionally, until browned on the outside and cooked through. Remove from skillet and set aside.
  3. Sauté the Vegetables: Add 1 tablespoon olive oil to the same skillet. Add the sliced red, yellow, and green bell peppers along with the onion. Sauté for 5–6 minutes until the vegetables are tender-crisp and slightly caramelized.
  4. Assemble the Bowls: Divide the cooked cilantro-lime or white rice among four serving bowls. Top each with black beans, the sautéed fajita vegetables, and cooked chicken.
  5. Add Fresh Toppings: Garnish each bowl with sliced avocado, pico de gallo, chopped fresh cilantro, and lime wedges for squeezing over just before eating.

Notes

  • For added richness, sprinkle shredded cheese or add a dollop of sour cream on top of the bowl.
