Description

This Chicken Cobbler is the ultimate cozy dinner featuring tender shredded chicken and mixed vegetables baked beneath a buttery, biscuit-like topping that forms a golden crust. Creamy, hearty, and irresistibly comforting, it’s perfect for a satisfying family meal.

Ingredients

Filling:

  • 3 cups cooked shredded chicken (rotisserie recommended)
  • 2 cups frozen mixed vegetables
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste

Cobbler Topping:

  • 2 cups Bisquick or biscuit mix
  • 1 ½ cups milk
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the cobbler.
  2. Prepare Filling: In a greased 9×13-inch baking dish, evenly layer the shredded chicken and frozen mixed vegetables.
  3. Make Sauce: In a bowl, whisk together chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper until combined. Pour this mixture evenly over the chicken and vegetables without stirring.
  4. Prepare Topping: In another bowl, whisk together the biscuit mix and milk until smooth. If using, stir in the shredded cheddar cheese gently.
  5. Assemble Cobbler: Pour the biscuit batter gently over the filling in the baking dish, being careful not to stir it into the sauce below.
  6. Bake: Place the baking dish in the oven and bake for 45 to 50 minutes, until the biscuit topping is cooked through and golden brown.
  7. Rest and Serve: Remove the cobbler from the oven and allow it to rest for 5 to 10 minutes before serving to let the flavors meld and the topping set.

Notes

  • Make it from scratch by replacing the cream of chicken soup with 1 cup heavy cream mixed with 1 tbsp flour plus extra seasoning for thickening.
  • Add fresh herbs like thyme or parsley to the filling for enhanced flavor and aroma.
  • For a spicy variation, mix in a pinch of cayenne pepper or chili flakes to the sauce.
  • To make this casserole gluten-free, use gluten-free biscuit mix and gluten-free cream of chicken soup alternatives.
