Instructions

  1. Combine Rice and Broth: In a large pot, combine the rinsed jasmine rice and chicken broth. Bring the mixture to a boil over medium-high heat to start the cooking process.
  2. Simmer the Porridge: Reduce heat to low and let the mixture simmer uncovered for 45 to 60 minutes. Stir occasionally to prevent sticking and to help the rice break down, creating a thick and creamy porridge consistency.
  3. Add Chicken and Aromatics: Add the chicken thighs or breasts, fresh ginger, minced garlic (if using), and salt to the pot. Continue to simmer gently for another 15 to 20 minutes until the chicken is fully cooked through.
  4. Shred Chicken: Remove the cooked chicken pieces from the pot and shred them finely using two forks or your hands. Return the shredded chicken to the congee pot.
  5. Finish with Sesame Oil: Stir in the sesame oil for a rich, nutty flavor. Taste the congee and adjust seasoning with additional salt if necessary.
  6. Serve with Toppings: Ladle the hot congee into bowls and garnish with sliced green onions and any desired optional toppings such as soft-boiled egg, fried shallots, soy sauce, chili oil, or fresh cilantro for extra flavor and texture.
