Description

Cheesy One Pot Beef and Potatoes is a hearty, comforting, and budget-friendly dinner recipe that combines seasoned ground beef, tender diced potatoes, and melty shredded cheddar cheese cooked together in one skillet for an easy and satisfying meal.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 3 cups diced potatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • ½ cup beef broth
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Heat Oil: Heat 1 tablespoon of olive oil in a large skillet over medium heat to prepare for cooking the beef and vegetables.
  2. Cook Beef and Onion: Add 1 pound of ground beef and the diced small onion to the skillet. Cook, stirring occasionally, until the beef is browned and the onion is softened, about 5–7 minutes.
  3. Add Seasonings: Stir in 2 cloves of minced garlic, ½ teaspoon paprika, ½ teaspoon salt, and ½ teaspoon black pepper. Cook for an additional 1 minute to release the flavors.
  4. Add Potatoes and Broth: Add 3 cups of diced potatoes and ½ cup of beef broth to the skillet. Stir to combine, then cover the skillet with a lid.
  5. Simmer Until Tender: Let the mixture cook covered on medium heat for 15 to 18 minutes, stirring occasionally, until the potatoes are tender when pierced with a fork.
  6. Add Cheese and Melt: Sprinkle 1 cup of shredded cheddar cheese evenly over the top of the mixture. Cover again and cook for 2 to 3 minutes until the cheese is fully melted and bubbly.
  7. Serve: Remove from heat and serve the cheesy beef and potatoes hot, garnished as desired.

Notes

  • Add diced bell peppers along with the onions for extra flavor and color.
  • Use Yukon gold potatoes for a creamier texture and better flavor absorption.
  • For a spicier kick, add a pinch of cayenne pepper or chili flakes with the other seasonings.
