Description

Ingredients

Egg Mixture

  • 8 large eggs
  • ¼ cup milk
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Vegetables

  • 1 cup baby spinach
  • 1 cup cherry tomatoes, halved
  • ½ cup diced bell pepper
  • ½ small onion, diced

Cheese and Oils

  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for finishing the frittata in the oven.
  2. Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, Italian seasoning, salt, and black pepper until fully combined and slightly frothy.
  3. Sauté Vegetables: Heat olive oil in a 10-inch cast iron skillet over medium heat. Add diced onion and bell pepper and sauté for 4 to 5 minutes until they soften. Then add baby spinach and cook just until wilted.
  4. Add Egg Mixture: Pour the egg mixture into the skillet over the sautéed vegetables and gently stir to evenly distribute the vegetables throughout the eggs.
  5. Add Toppings: Evenly top the mixture with halved cherry tomatoes and shredded cheese.
  6. Bake: Transfer the skillet to the preheated oven and bake for 12 to 15 minutes until the eggs are set and the cheese is melted and slightly golden.
  7. Garnish and Serve: Remove the frittata from the oven, sprinkle with freshly chopped parsley, slice, and serve warm.
