Ingredients
Salad
- 4 cups green cabbage, finely shredded
- 1 cup purple cabbage, shredded
- 1 cucumber, diced
- 3 green onions, sliced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh chives, chopped
- ¼ cup roasted sunflower seeds
Green Goddess Dressing
- ½ cup plain Greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 garlic clove
- ¼ cup fresh basil
- 2 tbsp fresh parsley
- Salt and black pepper, to taste
Instructions
- Prepare the salad: Combine the green cabbage, purple cabbage, cucumber, green onions, chopped parsley, chives, and roasted sunflower seeds in a large mixing bowl. Toss gently to mix all the crunchy, fresh ingredients evenly.
- Make the dressing: Place the plain Greek yogurt, olive oil, lemon juice, garlic clove, fresh basil, fresh parsley, salt, and black pepper into a blender or food processor. Blend until the mixture becomes a smooth, creamy herb dressing with a vibrant green color and fresh flavor.
- Dress the salad: Pour the blended Green Goddess dressing over the prepared salad ingredients. Toss thoroughly until every piece of vegetable is evenly coated with the creamy, herbaceous dressing.
- Serve or chill: Serve the salad immediately for peak freshness and crunch, or refrigerate it for 20 minutes to allow the flavors to meld together. This salad can be enjoyed as a light lunch or a side dish to your main course.
Notes
- Add grilled chicken or another protein of choice for extra protein and to make the salad more filling.
- Store the dressing separately if preparing the salad ahead of time to prevent sogginess and maintain crisp texture.
- Use roasted sunflower seeds for added crunch and a nutty flavor, but you can substitute with toasted pumpkin seeds or nuts if preferred.
- Adjust seasoning of the dressing with additional salt, pepper, or lemon juice to taste.
