Description

This Butternut Squash Ginger Soup is a smooth, comforting, and gently warming dish with a subtle spicy kick from fresh ginger. Naturally creamy and nutrient-rich, it makes a perfect cozy dinner, meal prep option, or light yet satisfying lunch.

Ingredients

Main Ingredients

  • 1 tbsp olive oil or coconut oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 4 cups vegetable broth (low sodium)
  • ½ tsp ground cinnamon (optional)
  • ¼ tsp ground nutmeg (optional)
  • Salt and black pepper, to taste

Optional Add-Ins

  • ½ cup coconut milk or cream (for extra creaminess)
  • Fresh thyme or parsley, for garnish

Instructions

  1. Heat oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the aromatics.
  2. Sauté onion: Add diced onion and cook for 5–7 minutes until it becomes soft and translucent, creating a flavorful base.
  3. Add garlic and ginger: Stir in minced garlic and grated fresh ginger and cook for 30 seconds until fragrant to release their aromas.
  4. Add squash and seasonings: Add cubed butternut squash, vegetable broth, ground cinnamon, nutmeg, salt, and black pepper to the pot, stirring to combine.
  5. Simmer: Bring mixture to a boil, then reduce heat to low, cover the pot, and let it simmer for 25–30 minutes until the squash is fork-tender and soft.
  6. Blend soup: Use an immersion blender directly in the pot or carefully transfer the soup to a blender and blend until smooth and creamy.
  7. Add coconut milk and heat: Stir in the optional coconut milk for extra creaminess and gently heat the soup for 2–3 minutes without boiling.
  8. Adjust seasoning and serve: Taste the soup and adjust salt and pepper as needed. Serve warm, garnished with fresh thyme or parsley if desired.

Notes

  • Roasting the butternut squash before cooking adds a deeper, caramelized flavor to the soup.
  • Adjust the amount of fresh ginger according to your preference for more or less warmth and spice.
  • The soup thickens as it cools; add extra vegetable broth when reheating to reach your desired consistency.
