Instructions

  1. Butter Poach Lobster: Remove the lobster meat from the shells and set aside. In a small saucepan, melt the unsalted butter over low heat along with the lightly crushed garlic clove, ensuring the butter does not simmer. Add the lobster meat and gently poach for 8 to 10 minutes, maintaining the butter at a low temperature to avoid frying. Once cooked, remove the lobster, chop into bite-sized pieces, and keep warm.
  2. Prepare Risotto Base: In a large pan, heat the butter and olive oil over medium heat. Add the minced shallot and cook until softened and translucent, approximately 2 minutes. Next, stir in the Arborio rice, toasting it for about 1 minute to slightly enhance the nutty aroma.
  3. Deglaze and Simmer Rice: Pour in the dry white wine and cook until it is fully absorbed by the rice, stirring continuously. Begin adding the warm seafood or chicken broth gradually, about ½ cup at a time, stirring constantly. Allow each addition to be absorbed before adding the next, creating a creamy, slowly cooking risotto. Continue this for about 20 minutes until the rice reaches a creamy texture and is just tender.
  4. Finish Risotto: Stir in the freshly grated Parmesan cheese along with salt and black pepper to taste. Gently fold in the poached lobster pieces and a spoonful of the butter-poaching liquid to enrich the flavor and creaminess. Mix carefully to avoid breaking up the lobster meat.
  5. Serve: Plate the risotto immediately while hot. Garnish optionally with fresh parsley or chives and an extra drizzle of melted butter or a sprinkle of Parmesan for added richness and presentation.
