Ingredients
Vegetables
- 2 cups broccoli florets
- 2 large potatoes, diced
- 1 small onion, chopped
Liquids
- 3 cups vegetable or chicken broth
- 1 cup milk
Dairy
- 2 tbsp butter
- 2 cups cheddar cheese, shredded
Other
- 2 tbsp flour
- Salt and pepper to taste
Instructions
- Sauté Onion: Melt butter in a pot over medium heat and sauté the chopped onion until it becomes soft and translucent, about 3-5 minutes.
- Make Roux: Stir in the flour with the butter and onions, cooking for about 1 minute to form a roux, which will help thicken the soup.
- Add Broth and Vegetables: Pour in the broth, then add the diced potatoes and broccoli florets. Bring to a simmer and cook until the vegetables are tender, approximately 15-20 minutes.
- Add Milk and Cheese: Stir in the milk and shredded cheddar cheese until the cheese is fully melted and the soup is creamy.
- Blend (Optional): Partially blend the soup with an immersion blender for a creamy texture with some chunky bits remaining, or blend fully for a smooth soup as preferred.
- Season and Serve: Season with salt and pepper to taste, stir well, and serve hot for a comforting meal.
Notes
- Use sharp cheddar cheese for a stronger, more pronounced flavor.
- Blend the soup fully for a smooth texture or partially for a chunkier consistency.
- Add carrots along with potatoes for extra sweetness and color.
