Description

A no-bake twist on the classic Boston cream pie, featuring layers of graham crackers, creamy vanilla pudding, and rich chocolate glaze. This easy make-ahead icebox cake is perfect for any occasion, combining the nostalgic flavors of the traditional dessert with the convenience of no baking required.

Ingredients

Cake Layers

  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping, thawed
  • 1 box graham crackers

Chocolate Topping

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Prepare the Pudding Mixture: In a large bowl, whisk together the instant vanilla pudding mix and cold milk until the mixture thickens, about 2 minutes. Then fold in the thawed whipped topping until smooth and creamy, creating a luscious pudding layer.
  2. Assemble Cake Layers: In a 9×13-inch dish, arrange a single layer of graham crackers evenly across the bottom. Spread one-third of the pudding mixture evenly over the graham crackers, smoothing the surface with a spatula.
  3. Repeat Layers: Repeat the layering process by adding another layer of graham crackers, followed by another third of the pudding mixture. Repeat one more time ending with a final layer of graham crackers on top.
  4. Prepare Chocolate Glaze: Heat the heavy cream in a small saucepan or microwave until it is hot but not boiling. Pour the hot cream over the semi-sweet chocolate chips and let it stand for 2 minutes to soften the chocolate. Stir gently until the glaze is smooth and glossy.
  5. Top the Cake: Pour and spread the chocolate glaze evenly over the top layer of graham crackers, covering the entire surface with the rich chocolate topping.
  6. Chill the Cake: Refrigerate the icebox cake for at least 6 hours or preferably overnight to allow the layers to set and flavors to meld perfectly before serving.

Notes

  • Overnight chilling creates the best texture and flavor meld.
  • Use homemade pastry cream for a more traditional Boston cream pie flavor.
  • Keep refrigerated until ready to serve to maintain freshness and texture.
