Blueberry Baked Donuts are soft, fluffy donuts bursting with fresh blueberries and baked to perfection instead of fried. These donuts offer a lighter, healthier alternative perfect for breakfast or a delightful sweet snack, featuring a hint of cinnamon and an optional sweet vanilla glaze.
Ingredients
Donuts
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 3/4 cup fresh blueberries
Optional Glaze
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a donut pan thoroughly to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon to blend evenly.
- Combine Wet Ingredients: In a separate bowl, beat together the milk, large egg, melted butter, and vanilla extract until well combined.
- Combine Wet and Dry Mixtures: Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined to avoid overmixing which can toughen the donuts.
- Fold in Blueberries: Gently fold in the fresh blueberries to distribute them evenly without crushing.
- Fill Donut Pan: Spoon or use a piping bag to fill the prepared donut pan holes about 3/4 full with the batter, ensuring an even layer for baking.
- Bake Donuts: Bake in the preheated oven for 12–15 minutes, or until the donuts are lightly golden and a toothpick inserted comes out clean.
- Cool Donuts: Allow the donuts to cool slightly in the pan for about 5 minutes before carefully removing them to a wire rack to cool completely.
- Prepare and Drizzle Glaze (Optional): In a small bowl, mix powdered sugar with 1-2 tablespoons milk and vanilla extract until smooth; drizzle over cooled donuts before serving.
Notes
- Toss blueberries in a little flour before folding into batter to prevent them from sinking to the bottom during baking.
- If fresh blueberries are unavailable, frozen blueberries can be used; no need to thaw before adding.
- Store leftover donuts in an airtight container at room temperature for up to 2 days to maintain freshness.
