Description
An ultra-rich, decadent chocolate cake inspired by the famous cake from Matilda, featuring moist chocolate layers and a luscious, glossy chocolate fudge frosting that melts in your mouth.
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup hot coffee
For the Chocolate Fudge Frosting:
- 1 cup butter
- 3/4 cup cocoa powder
- 3 cups powdered sugar
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and line two round cake pans with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Add Wet Ingredients: Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until the batter is smooth and fully combined.
- Incorporate Hot Coffee: Carefully stir in the hot coffee, which thins the batter and intensifies the chocolate flavor without adding a coffee taste.
- Divide and Bake: Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool Cake Layers: Remove cakes from the oven and let them cool completely in their pans before removing to prevent breaking.
- Prepare Frosting: In a saucepan or microwave, melt the butter gently. Whisk in the cocoa powder until smooth, then add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Beat until the frosting becomes smooth and fluffy.
- Frost the Cake: Once the cake layers have completely cooled, frost generously by spreading the chocolate fudge frosting over the top and sides of the cake for a luscious finish.
Notes
- Hot coffee enhances the chocolate flavor without adding coffee taste.
- Chill the cake slightly before slicing to ensure clean cuts.
- Use high-quality cocoa powder for the best possible chocolate taste.
