Description

Beef Fried Rice is a quick and satisfying Chinese-inspired main course made with tender strips of beef, vegetables, eggs, and chilled rice tossed in a savory sauce. Perfect for using leftover rice, this flavorful dish comes together in under 30 minutes, making it an ideal quick dinner option.

Ingredients

Beef

  • 1 pound flank steak or sirloin, thinly sliced
  • ¼ teaspoon black pepper
  • Salt, as needed

Rice and Vegetables

  • 3 cups cooked and chilled long-grain rice
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Eggs

  • 2 large eggs, lightly beaten

Sauces and Oils

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons avocado oil or vegetable oil, divided

Instructions

  1. Prepare the beef: Pat the thinly sliced beef dry and season lightly with black pepper and salt to enhance the flavor and ensure tenderness during cooking.
  2. Cook the beef: Heat 1 tablespoon of oil in a large skillet or wok over high heat. Add the beef and cook for 2–3 minutes, stirring occasionally, until browned but still tender. Remove from skillet and set aside.
  3. Scramble the eggs: Add the remaining tablespoon of oil to the skillet. Pour in the lightly beaten eggs and gently scramble until just cooked but still soft, then push the eggs to the side.
  4. Cook the vegetables: Add the frozen peas and carrots, minced garlic, and grated ginger to the skillet. Stir-fry together for 1–2 minutes until fragrant and vegetables are heated through.
  5. Add the rice: Add the chilled cooked rice to the skillet, breaking apart any clumps with a spatula. Stir-fry for 3–4 minutes until the rice is hot and lightly toasted.
  6. Combine beef with rice: Return the cooked beef to the skillet with the rice and vegetable mixture.
  7. Add sauces and season: Pour in the low-sodium soy sauce, oyster sauce, and toasted sesame oil. Toss everything together until evenly coated and heated through.
  8. Finish with green onions and serve: Stir in the sliced green onions, give everything a final toss, and serve the fried rice immediately while hot.

Notes

  • Use chilled, day-old rice for the best texture and to prevent the fried rice from becoming mushy.
  • Slice the beef against the grain for maximum tenderness.
  • Add extra vegetables like mushrooms, bell peppers, corn, or broccoli to customize the dish.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days for easy reheating.
