Ingredients
Beef Filling
- 2 cups cooked shredded beef
- 1 small onion, finely diced
- 1 tsp ground cumin
- ½ tsp garlic powder
- Salt and pepper, to taste
Enchiladas Assembly
- 8 corn or flour tortillas
- 2 cups green enchilada sauce
- 2 cups shredded Monterey Jack cheese
Garnish
- Chopped cilantro, for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the enchiladas.
- Prepare the Beef Mixture: In a medium bowl, combine the shredded beef with the finely diced onion, ground cumin, garlic powder, and salt and pepper to taste. Mix well to evenly distribute the spices and onion.
- Prepare Baking Dish: Spread ½ cup of the green enchilada sauce in the bottom of a 9×13-inch baking dish to prevent sticking and add flavor to the dish base.
- Assemble Enchiladas: Take each tortilla and spoon an equal amount of the beef mixture and a small portion of shredded cheese onto it. Roll the tortilla tightly and place it seam-side down in the prepared baking dish.
- Add Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled enchiladas. Then sprinkle the remaining shredded Monterey Jack cheese evenly over the top to create a cheesy crust when baked.
- Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes until the sauce is bubbly and the cheese is melted and slightly golden.
- Garnish and Serve: Remove from the oven and garnish the enchiladas with freshly chopped cilantro before serving to add brightness and freshness.
Notes
- Serve these beef enchiladas with traditional sides such as Mexican rice, refried beans, or a fresh salad for a complete meal.
- Using rotisserie-style shredded beef can save preparation time while providing great flavor.
- For a spicier version, consider adding diced jalapeños or a pinch of chili powder to the beef mixture.
- If you prefer corn tortillas, warm them slightly before filling to make them more pliable and easier to roll.
