Description

Hearty and comforting, this Beef and Bean Chili is a one-pot wonder filled with smoky spices, tender beef, and rich tomato flavor — perfect for chilly evenings and satisfying meals.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

Beans and Tomatoes

  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) diced tomatoes

Seasonings

  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt & pepper to taste

Instructions

  1. Brown the Meat: In a pot, cook the ground beef with diced onion and minced garlic over medium heat until the beef is fully browned and the onion is soft. Drain excess fat to reduce grease.
  2. Add Seasonings: Stir in the tomato paste, chili powder, cumin, salt, and pepper thoroughly to coat the beef and aromatize the mixture.
  3. Simmer the Chili: Add the drained kidney beans, black beans, and diced tomatoes to the pot. Stir well, bring to a simmer, and cook uncovered for 20–25 minutes to blend the flavors and thicken the chili.
  4. Adjust and Serve: Taste the chili and adjust seasoning with additional salt and pepper if necessary. Serve hot, optionally garnished with sour cream, cheese, or fresh cilantro.

Notes

  • Garnish with sour cream, cheese, or cilantro for added flavor and creaminess.
  • This chili freezes well and can be stored in the freezer for up to 3 months, making it excellent for meal prep.
