Ingredients

Chicken Skewers

  • lbs boneless, skinless chicken breasts, cut into cubes

  • ½ cup barbecue sauce

Salad

  • 6 cups chopped romaine lettuce
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • ¼ cup thinly sliced red onion
  • ½ cup shredded cheddar cheese

Dressing

  • ¼ cup ranch dressing
  • 2 tbsp barbecue sauce

Instructions

  1. Prepare the Chicken: Toss the chicken cubes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  2. Thread the Skewers: Thread the seasoned chicken pieces onto skewers, making sure they are spaced slightly for even cooking.
  3. Grill the Chicken: Place the skewers over medium-high heat on the grill. Cook for 10–12 minutes, turning occasionally to ensure even grilling.
  4. Brush with BBQ Sauce: During the last 2 minutes of grilling, brush the chicken skewers with barbecue sauce to glaze and enhance the smoky flavor.
  5. Prepare the Salad: In a large bowl, combine chopped romaine lettuce, corn kernels, halved cherry tomatoes, diced cucumber, sliced avocado, thinly sliced red onion, and shredded cheddar cheese. Toss gently to mix.
  6. Make the Dressing: In a small bowl, whisk together ranch dressing, barbecue sauce, and lime juice until smooth and well combined.
