Ingredients
Chicken Skewers
- 1½ lbs boneless, skinless chicken breasts, cut into cubes
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper to taste
- ½ cup barbecue sauce
Salad
- 6 cups chopped romaine lettuce
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- ¼ cup thinly sliced red onion
- ½ cup shredded cheddar cheese
Dressing
- ¼ cup ranch dressing
- 2 tbsp barbecue sauce
- 1 tbsp lime juice
Instructions
- Prepare the Chicken: Toss the chicken cubes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Thread the Skewers: Thread the seasoned chicken pieces onto skewers, making sure they are spaced slightly for even cooking.
- Grill the Chicken: Place the skewers over medium-high heat on the grill. Cook for 10–12 minutes, turning occasionally to ensure even grilling.
- Brush with BBQ Sauce: During the last 2 minutes of grilling, brush the chicken skewers with barbecue sauce to glaze and enhance the smoky flavor.
- Prepare the Salad: In a large bowl, combine chopped romaine lettuce, corn kernels, halved cherry tomatoes, diced cucumber, sliced avocado, thinly sliced red onion, and shredded cheddar cheese. Toss gently to mix.
- Make the Dressing: In a small bowl, whisk together ranch dressing, barbecue sauce, and lime juice until smooth and well combined.
- Assemble and Serve: Lay the grilled chicken skewers on top of the salad. Drizzle with the prepared dressing and serve immediately for the freshest taste.
