Description

BBQ Chicken and Potato Bake is a hearty one-pan dinner featuring tender chicken breasts, seasoned roasted potatoes, and smoky barbecue sauce topped with melted cheddar cheese. This dish is simple to prepare, packed with flavor, and perfect for busy weeknights when you want a comforting home-cooked meal with minimal cleanup.

Ingredients

Chicken and Potatoes

  • 4 boneless, skinless chicken breasts
  • 3 cups diced potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Sauce and Toppings

  • 1 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • Chopped green onions for garnish

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 400°F (200°C) and grease a large baking dish to prevent sticking and make cleanup easier.
  2. Season and arrange potatoes: Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread the seasoned potatoes in an even layer in the bottom of the prepared baking dish.
  3. Place chicken on potatoes: Lay the boneless, skinless chicken breasts on top of the potatoes to allow the flavors to meld while baking.
  4. Apply barbecue sauce: Brush the chicken breasts generously with barbecue sauce to infuse smoky, tangy flavor.
  5. Bake covered: Cover the baking dish loosely with aluminum foil to keep moisture in, then bake for 35 minutes allowing the chicken to cook through and potatoes to soften.
  6. Add cheese and onion, then continue baking: Remove the foil, sprinkle shredded cheddar cheese and diced red onion evenly over the chicken and potatoes. Return to oven and bake uncovered for an additional 10–15 minutes until the chicken is fully cooked and the cheese has melted and is bubbly.
  7. Garnish and serve: Remove from oven and garnish with chopped green onions before serving warm.

  • Cut potatoes into uniform, evenly sized pieces to ensure consistent cooking.
  • Feel free to use your favorite style of barbecue sauce, whether sweet, smoky, or spicy, to customize the flavor.
