Description

Banga Soup is a rich and traditional Nigerian soup made from palm nut extract, popular in the Niger Delta region. This hearty soup combines assorted meats or fish with aromatic spices and fragrance from scent leaves or basil, delivering an authentic taste of Nigerian cuisine.

Ingredients

Main Ingredients

  • 4 cups palm nut extract
  • 1 pound assorted meat or fish
  • 1/2 cup dried fish
  • 2 tablespoons ground crayfish
  • 1 teaspoon ataiko spice
  • 1 teaspoon ground pepper
  • Salt to taste
  • Scent leaves or basil, chopped

Instructions

  1. Boil the meat: Begin by boiling the assorted meats or fish in a pot until they are tender. This usually takes about 30 to 40 minutes depending on the type and cut of meat.
  2. Add palm nut extract: Once the meat is tender, add 4 cups of palm nut extract to the pot and allow it to cook together for around 15 minutes. This helps to infuse the meat with the rich flavors of the palm nut.
  3. Incorporate spices and dried fish: Stir in the ground crayfish, ataiko spice, ground pepper, and the dried fish. Ensure all ingredients are well mixed to blend the distinct tastes evenly into the soup.
  4. Simmer: Reduce the heat and let the soup simmer gently until you see the characteristic rich oil start to rise to the top of the soup, indicating it is cooked through and flavorful.
  5. Finish with scent leaves: Turn off the heat and add freshly chopped scent leaves or basil to the soup. Stir gently and allow the fragrance to infuse before serving.

Notes

  • Serve Banga Soup traditionally with starch, fufu, or your preferred swallow accompaniment.
  • You may substitute assorted meat with seafood or just fish for a lighter version.
  • Adjust spice levels according to your preference.
  • Scent leaves add a unique aroma but basil can be used as a substitute if unavailable.
