Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the cherry tomatoes.
 - Roast the tomatoes: Toss the halved cherry tomatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 10 minutes until they are juicy and slightly caramelized.
 - Toast the bread: While the tomatoes roast, toast your slices of sourdough or whole-grain bread to your preferred level of crispness using a toaster or toaster oven.
 - Mash the avocado: Peel and pit the ripe avocado, then mash it until smooth or chunky—whichever texture you prefer. Spread the mashed avocado evenly over the toasted bread slices.
 - Assemble the toast: Top the avocado-covered toast with the warm roasted tomatoes, distributing them evenly for maximum flavor.
 - Season and garnish: Sprinkle everything bagel seasoning generously over the top. Add optional lemon zest and red pepper flakes if desired for a zesty and spicy kick.
