Description

Start your morning with this hearty Apple Sausage Breakfast featuring savory breakfast sausage, sweet crisp apples, caramelized onions, and perfectly seasoned potatoes. This comforting one-skillet breakfast is packed with flavor and ideal for weekend brunch or meal prep.

Ingredients

Meat and Produce

  • 1 lb breakfast sausage, sliced or crumbled
  • 2 medium apples, cored and diced
  • 2 cups baby potatoes, diced
  • 1 small onion, diced
  • 2 tbsp chopped fresh parsley

Spices and Oils

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Heat the oil: Heat the olive oil in a large skillet over medium heat to prepare for cooking the potatoes and other ingredients.
  2. Cook potatoes: Add the diced baby potatoes to the skillet and cook for 10–12 minutes, stirring occasionally, until they are lightly browned and tender.
  3. Sauté onions: Stir in the diced onion and cook for an additional 3 minutes until softened and aromatic.
  4. Brown sausage: Add the breakfast sausage to the skillet and cook until it is browned and fully cooked through, breaking up pieces if crumbled sausage is used.
  5. Add apples and seasonings: Mix in the diced apples along with garlic powder, dried thyme, smoked paprika, salt, and black pepper for flavor.
  6. Cook apples: Continue cooking for 4–5 minutes more until the apples become slightly tender but still hold their shape.
  7. Garnish and serve: Remove from heat and garnish with fresh chopped parsley. Serve the breakfast warm for a satisfying meal.

Notes

  • Honeycrisp or Gala apples work best for a balance of sweetness and texture.
  • Add fried or poached eggs on top for extra protein and a more filling meal.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
