Instructions

- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and salt. Whisk together to evenly distribute the leavening agents and spice.
- Combine Wet Ingredients: In a separate bowl, whisk together the sugar, egg, milk, oil (or melted butter), and vanilla extract until the mixture is smooth and slightly frothy.
- Combine Wet & Dry: Pour the wet ingredient mixture into the dry ingredients and stir gently just until combined; be careful not to overmix to keep the muffins tender.
- Fold in Apples: Carefully fold the diced apples into the batter ensuring they are evenly distributed without overworking the batter.
- Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
- Add Cinnamon Sugar Topping: Mix together the sugar and cinnamon for the topping and sprinkle it generously over each muffin batter cup to create a sweet crust.
- Bake: Bake the muffins in the preheated oven for 18–22 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Cool and Serve: Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring to a wire rack to cool completely or serve warm.
