Description

This 1-Pot Honey Garlic Chicken & Penne is a deliciously simple, sweet and savory meal perfect for busy weeknights. Juicy diced chicken is cooked with garlic and a sticky honey-soy sauce, then simmered together with penne pasta and chicken broth until tender. Finished with parmesan cheese and a sprinkle of chili flakes for a subtle kick, it’s a comforting, all-in-one dish that requires minimal cleanup.

Ingredients

Chicken & Sauce

  • 2 chicken breasts, diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 3 tbsp soy sauce
  • 2 cups chicken broth
  • 1 tsp chili flakes (optional)

Pasta & Garnish

  • 8 oz penne pasta
  • ½ cup parmesan cheese
  • Green onions for garnish

Instructions

  1. Cook the chicken: Heat olive oil in a large pot over medium heat. Add the diced chicken breasts and cook, stirring occasionally, until the chicken is browned on all sides and cooked through, about 5–7 minutes.
  2. Add garlic: Stir in the minced garlic and cook for about 30 seconds, just until fragrant, being careful not to burn it.
  3. Create the sauce and add pasta: Pour in the honey, soy sauce, and chicken broth, stirring to combine. Add the penne pasta to the pot and mix everything thoroughly.
  4. Simmer the pasta: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently, stirring occasionally, until the pasta is tender and has absorbed most of the liquid, about 12–15 minutes.
  5. Finish with cheese and spices: Stir in the parmesan cheese and chili flakes (if using) until the cheese melts and blends into the sauce, creating a creamy texture.
  6. Garnish and serve: Sprinkle sliced green onions over the top for a fresh, colorful garnish. Serve the dish hot and enjoy!

Notes

  • Add broccoli or bell peppers during the simmering step for extra vegetables and nutrition.
  • Adjust the amount of honey to your preferred sweetness level.
  • Use low-sodium soy sauce for a lighter sodium option.
  • Parmesan cheese can be omitted or substituted with a dairy-free alternative for a dairy-free version.
