Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil (if needed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4–5 medium russet or Yukon gold potatoes, sliced
- 6 cups chicken broth
- 1 cup heavy cream
- 4 cups fresh kale, chopped
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and pepper, to taste
- Parmesan cheese, for serving (optional)
Instructions
- In a large pot, cook Italian sausage over medium heat until browned, breaking into crumbles. Drain excess fat if needed.
- Add diced onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add sliced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes.
- Stir in chopped kale and cook until wilted.
- Lower the heat and pour in heavy cream, stirring gently to combine.
- Season with salt, pepper, and crushed red pepper flakes to taste.
- Serve hot, topped with Parmesan cheese if desired.

- Use turkey sausage or plant-based sausage for a lighter version.
- Swap kale for spinach or Swiss chard for variety.
- For dairy-free, replace heavy cream with coconut milk.
