Description

Zuppa Toscana Soup is a creamy, hearty Italian-inspired soup made with savory sausage, tender potatoes, fresh kale, and a rich broth. Perfect for cozy nights, it’s flavorful, comforting, and ready in under an hour.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 45 medium russet or Yukon gold potatoes, sliced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 4 cups fresh kale, chopped
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot, cook Italian sausage over medium heat until browned, breaking into crumbles. Drain excess fat if needed.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add sliced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes.
  5. Stir in chopped kale and cook until wilted.
  6. Lower the heat and pour in heavy cream, stirring gently to combine.
  7. Season with salt, pepper, and crushed red pepper flakes to taste.
  8. Serve hot, topped with Parmesan cheese if desired.

  • Use turkey sausage or plant-based sausage for a lighter version.
  • Swap kale for spinach or Swiss chard for variety.
  • For dairy-free, replace heavy cream with coconut milk.
