Instructions
- Preheat Oven: Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper to prepare for baking the cookies.
 - Prepare Flax Egg: In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water. Let it sit for about 5 minutes until it thickens to form a flax egg, which acts as an egg substitute in the recipe.
 - Cream Oils and Sugars: In a large mixing bowl, cream together the softened coconut oil or vegan butter with the brown sugar and granulated sugar until the mixture is smooth and well combined.
 - Add Flax Egg and Vanilla: Mix the prepared flax egg and 1 teaspoon of vanilla extract into the creamed sugar and coconut oil mixture, stirring well to incorporate all ingredients.
 - Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and all the chai spices including cinnamon, ginger, cardamom, nutmeg, cloves, and optional black pepper to evenly distribute the spices.
 - Combine Wet and Dry Ingredients: Add the dry ingredient mixture to the wet mixture and stir until a dough forms, making sure it is well combined but not over-mixed.
 - Shape Cookies: Scoop 1 to 2 tablespoons of dough at a time, roll into balls, and place on the prepared baking sheet. Gently flatten each cookie ball to shape them evenly.
