Description

Soft, warm, and perfectly spiced, these Vegan Chai Cookies are infused with cozy chai flavors and make the perfect fall or winter treat. They’re dairy-free, egg-free, and incredibly easy to make, featuring a blend of aromatic spices like cinnamon, ginger, and cardamom for a comforting and flavorful cookie experience.

Ingredients

Main Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup coconut oil (soft, not melted) or vegan butter
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Chai Spice Blend

  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • Optional: ⅛ tsp black pepper (for a traditional chai kick)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper to prepare for baking the cookies.
  2. Prepare Flax Egg: In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water. Let it sit for about 5 minutes until it thickens to form a flax egg, which acts as an egg substitute in the recipe.
  3. Cream Oils and Sugars: In a large mixing bowl, cream together the softened coconut oil or vegan butter with the brown sugar and granulated sugar until the mixture is smooth and well combined.
  4. Add Flax Egg and Vanilla: Mix the prepared flax egg and 1 teaspoon of vanilla extract into the creamed sugar and coconut oil mixture, stirring well to incorporate all ingredients.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and all the chai spices including cinnamon, ginger, cardamom, nutmeg, cloves, and optional black pepper to evenly distribute the spices.
  6. Combine Wet and Dry Ingredients: Add the dry ingredient mixture to the wet mixture and stir until a dough forms, making sure it is well combined but not over-mixed.
  7. Shape Cookies: Scoop 1 to 2 tablespoons of dough at a time, roll into balls, and place on the prepared baking sheet. Gently flatten each cookie ball to shape them evenly.
  8. Bake Cookies: Bake in the preheated oven for 10 to 12 minutes or until the edges are set but the centers remain soft.
  9. Cool Cookies: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving or storing.

Notes

  • For an extra chai flavor, roll cookie dough balls in cinnamon sugar before baking to add an extra layer of sweetness and spice.
  • Add ½ cup dairy-free white chocolate chips to the dough for a sweeter, creamier variation.
  • Store the cookies in an airtight container at room temperature for up to 5 days or freeze them for up to 2 months for longer storage.
