Instructions
- Sauté Vegetables: Heat the oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 5-7 minutes.
- Add Cabbage and Broth: Stir in the chopped cabbage and pour in the vegetable broth. Bring the mixture to a boil.
- Simmer Soup: Reduce the heat to low and let the soup simmer uncovered for 20–25 minutes, or until all the vegetables are tender. Season with salt and pepper to taste before serving.
