Description

A light and nourishing vegan cabbage soup featuring tender cabbage and fresh vegetables simmered in savory vegetable broth, perfect for a healthy and comforting meal.

Ingredients

Vegetables

  • ½ head cabbage, chopped
  • 3 carrots, sliced
  • 1 onion, chopped
  • 1 celery stalk, sliced

Other Ingredients

  • 1 tablespoon oil
  • 6 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Sauté Vegetables: Heat the oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 5-7 minutes.
  2. Add Cabbage and Broth: Stir in the chopped cabbage and pour in the vegetable broth. Bring the mixture to a boil.
  3. Simmer Soup: Reduce the heat to low and let the soup simmer uncovered for 20–25 minutes, or until all the vegetables are tender. Season with salt and pepper to taste before serving.

Notes

  • Add cooked beans such as white beans or chickpeas to increase protein content and make the soup more filling.
  • For extra flavor, consider adding garlic or herbs like thyme or bay leaves during the sautéing step.
  • This soup can be stored in the refrigerator for up to 4 days and reheated gently on the stove.
